I had some leftover meatloaf so I decided to make some spaghetti meat sauce. I pulverized an onion in the food processor (my husband hates chunks of onion). Then I sautéed those in some olive oil until translucent, added some crushed garlic (3 - 4 cloves of it - I LOVE garlic stirred until aromatic (about 30 seconds). Then I added some oregano and Italian seasoning. Dumped in a jar of Prego and some chicken stock (about 2 cups). Added salt and pepper to taste and some sriracha sauce. Stirred, brought to gentle summer. Broke up meatloaf and added it to the sauce. Brought back to simmer, let cool down a bit and then serve. YUM!!!!

BBQ Bacon-Wrapped Meatloaf
I made this last night, it was the best meatloaf I've ever made!
BBQ Bacon-Wrapped Meatloaf
1 package bacon
1 pound lean ground beef
1 pound ground pork
1 medium onion, finely chopped
2/3 cup fine dry bread crumbs
1 large egg, slightly beaten
1/3 cup grated fresh Parmesan cheese
1 teaspoon Cajun seasonings
1 heaping tablespoon spicy brown mustard
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/3 cup whole milk
3/4 cup cup barbecue sauce (reserve half)
Preheat your oven to 350 degrees. Line a sheet pan with foil and fold up edges making a dam to catch the drippings/fat.
In a large bowl, combine all of the ingredients but with only half of BBQ sauce
With your super duper clean hands, mix until combined and then form into a 9x5 loaf.
Top with remaining BBQ sauce and then wrap with the bacon
Tent for with foil and cook for 20 - 30 minutes (to prevent the bacon from burning). Remove and cook for the remaining 30 - 40 minutes. Remove from oven and let rest at least 10 minutes, Slice and enjoy
